The yeast is one of the most important natural sources of thiamine (vitamin B1), which is essential to the metabolism of carbohydrates and fats: a table spoon provides nine times the recommended vitamin B1 nutritional intake.
It is also an excellent source of vitamin B2 (riboflavin) and B3 (niacin). It also contains vitamin B5 (Pantothenic acid), B6 (pyridoxine) and B8 as well as high quality protein. It contains some polysaccharides, particularly of glycanes and of mannanes, substances which may have an interesting effect on the immune system.
